Store Hours and Address

Bread and Dinner in the New Bread Oven
My new oven is finally operational and I am starting to figure it out. As with every oven it takes a while to know it and be comfortable working with it. Tomorrow (Thursday) at Dalhousie Market
Inspired by Fritz Pastry in Chicago I decided to do different scone flavour every week. I usually do sweet and savoury ones  so this week it will be marzipan and apple for the sweet ones and cheese with fennel seeds for the savoury ones. I will also have whole-wheat multigrain sourdough, pain rustic and maybe, if I have time,  some cakes.

Poppy Seed Theme: I got some blue and white poppy seeds from my friends at Silk Road Spices so I am baking a sourdough with poppy seeds and Rustic bread with poppy seeds. Scone selection for tomorrow include marzipan and apple for the sweet scones and bacon and Canadian cheddar for the savory ones. There might be some poppy seeds there as well. See you tomorrow. I am back in Calgary and will do the bread delivery on Monday as usual. I am baking a Pain au Levain, the basic french sourdough, because I think this is the most fundamental bread and I like to start my “bread year” with the basic and build upon it. Sourdough Bread with Red Fife Heritage Wheat
Red Fife is Canada’s oldest bread wheat. The wheat has genetic variability in the grain that allows it to adopt to diverse growing conditions. Mark Gibeau is growing Organic Red Fife wheat outside of Calgary and milling it in a stone grinder. I just got my first batch of Mark’s Red Fife and will start using it in my Whole-Wheat Sourdoughs beginning this weekend.
