Small Apple Salad

When summer is here, and the farmers markets are full of fresh and fantastic fruits and vegetables, my main shopping criteria is beauty. I just buy what I think is the most beautiful and colourful produce. On Wednesdays evening, as the Hillhurst Sunnyside Market is winding down, I usually go around and pick up stuff from the vendors.

Two of my favourite vendors are Rod and Chad from Leaf and Lyre Urban Farm. Apart from being the coolest, cause they are urban farmers, and the most pleasant people, they also have amazing salad mixes, fresh herbs and veggies.

Last week they had a large tub full of little, red, irresistible apples. I wasn’t sure what I am going to do with them but yesterday we made some grilled sausages with vegetables and a salad using the these apples.

So, here is the recipe:

Take the stems off a bunch of Swiss Chard, Kale or other greens. Cook in boiling, salty water for a couple of minutes. Remove and wash with cold water to stop the cooking. Drain and cut to strips.

In a pan, heat some olive oil and cook chopped onion and garlic for few minutes. Cut the apples to half, core and add as much as you like to the pan and cook for a few more minutes until a bit soft but still crunchy. Add the greens to the pan, mix together, flavour with salt and pepper and serve. You can add blue cheese if you like. It goes great with grilled sausages.
