My new oven is finally operational and I am starting to figure it out. As with every oven it takes a while to know it and be comfortable working with it. Here is a photo of today’s bread.

Once this oven is hot it cools down very slowly. I wanted to use it as it cools so I cooked dinner while preparing the dough for tomorrow’s bread. Here is the recipe:
Wash and pat dry the chicken. Rub it with coarse salt and some herbs. I used Sumac and grinned lavender (you can get it at Silk Road). Put in a cast iron pot and add potatoes lots of garlic, rosemary and star anise and bake at 400 degrees for about an hour and a half.
